Green Chili


This stuff is so good, it’s hard to stop eating it. The kids love it, too!

1lg onion, diced
3T olive oil
2t oregano
1/2c coarsely chopped cilantro
2 cans canellini beans, drained
2 cans chopped mild green chilis, drained

In a pot (not a frying pan) fry the onion and oregano in the oil until soft.

Add cilantro and cook a few minutes more just to wilt the cilantro.

Add beans and chilis and heat through.

Serve with corn chips for dipping.
