Oatmeal Muffins

Growing up, oatmeal muffins were one of my favorite things my mom made. She and I used to say that we could live on them if we had to! One day, when I was living away from home, I began to make them and discovered I didn't have enough oatmeal. To replace the missing oatmeal, I substituted some Maypo, which is a brand of maple flavored hot cereal. Wow. Did it make great muffins. Ever since then, I can't make these muffins without my "secret" ingredient. (By the way, I made them once for Dan when we were dating, and he loved them. They quickly became one of his favorites, too!)

1c flour
1/4c sugar
3t baking powder
1/2t salt
1c old fashioned oats
1c soymilk, plain or vanilla (1 small box)
3T vegetable oil
2T maple syrup


Mix dry ingredients in a bowl.
Add wet ingredients and stir just to moisten.
Pour into muffin tin and bake at 425 for 10-12 minutes.


Variation

These muffins are thick and chewy, which is just the way Dan and I like them. If you prefer a lighter muffin, sift the first four ingredients and use quick cooking oats.
