1c flour
1c wheat flour
2 tsp baking powder
1/2 tsp sea salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 cup maple syrup
1/2 cup oil
1 cup diced, peeled apples
1c apple or other fruit juice (more or less to make consistency right)
Place dry ingredients in a bowl and mix well. Mix wet ingredients together and add to dry. Place in an 8" round, slightly greased pan.
Topping:
1/2 cup chopped walnuts (or nut of your choice)
1/2 tsp cinnamon
2 Tbsp rice syrup or maple syrup
1 tsp oil
Mix together and spread evenly over cake. (You may have to wet fingers to spread mixture evenly.)
Bake at 350F for 40-45 minutes. Cool and serve.
NOTE: This recipe works equally well with pears. Just add 1 tsp ginger to cake and 1/2 tsp ginger to topping.
HINT: Instead of above topping, spread with favourite jam or apple butter and put nuts in cake.
