2 cups chickpea flour
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon pepper
2/3 cup nutritional yeast
1 teaspoon baking soda
1 teaspoon salt
Combine all ingredients and store in a mason jar until ready to use.
To make one omelet, combine 1/3c mix and 1/4c water.
Heat a small amount of oil in a frying pan over medium heat. Pour the batter into the pan, as if making pancakes. When the underside is browned, flip the omelet again, and cook the other side for a minute.
Topped with your choice of veggies. My favorites are tomatoes, zucchini, and spinach.
