Oriental Brown Rice Salad

1c brown rice

2T canola oil
2T lemon juice
1T soy sauce or tamari
1/2t fresh ginger, minced
1/2t garlic powder

1/2c tofu, cut into 1/2" cubes

1c snow peas or sugar snap peas, cut on the diagonal into bite-sized pieces
2 stalks celery, cut on the diagonal into bite-sized pieces

Cook rice according to package directions.

Meanwhile, combine dressing ingredients.  Add tofu to marinate.

When rice is finished, add marinated tofu and vegetables.  Serve warm or room temperature.
