Sweet and Sour Cabbage Soup

One of my all time favorite soups.  It is an adaptation from a book, but I no longer have the original source, so I'm sorry I can't credit it.

Pantry
crock pot
1 can diced tomatoes

Produce
2lbs (1 small head) cabbage, cored and diced
1 1/2c diced onion
1/2c diced carrot
1/4c diced celery
juice of 1 lemon

Groceries
8 gingersnaps, crumbled
1c undiluted apple juice concentrate

Spices
1/2t dill
2t basil
1 1/2T salt
dash pepper 

Staples
1/4c brown sugar


Add all ingredients to crock pot, along with 6 1/2c water.

Cook on high, a minimum of 6 hours.

Can also be cooked on the stove.  Bring to a boil and simmer at least 2 1/2 hours.

The author recommends serving with rye or onion bread.
