Fried Potatoes

Russet potatoes
Sweet potatoes, if desired
oil
butter


Note: If using sweet potatoes, ratio should be no more than 1/3 of total potatoes.

Scrub potatoes, remove blemishes, and shred.  (Peel sweet potatoes, if using.)

Heat oil in non-stick pan or electric skillet.

Add potatoes and dot with butter.

Cover and cook until bottom is brown and potatoes are soft, approximately 10 minutes.

Flip potatoes and cook uncovered until bottom is brown, approximately 10 more minutes.
