3T tamari
3T peanut butter
2t onion powder
1/2t garlic powder
1lb firm tofu, crumbled
2T oil
6 large bells peppers, halved and seeded (save tops)
2T oil
1 large onion, chopped
2 stalks celery, chopped
bell pepper tops, chopped
2 cloves garlic, minced
1T chili powder
1t cumin
1/2t oregano
1c tomato sauce
1 1/2c cut corn
Mix first four ingredients and add to tofu. Let sit 30 minutes.
Parboil peppers for 5 minutes.
Saute onion, celery, pepper tops, and garlic. Add chili powder, cumin, and oregano. Set aside.
Brown marinated tofu. Add to onion mixture.
Add corn and tomato sauce.
Stuff peppers.
Bake at 400 for 25 minutes.
