Veggies and Dumplings

Vegetarian chicken or vegetable broth
 

Assorted chopped vegetables, such as:
onion
carrots
broccoli
corn
green beans
zucchini
potatoes
 

2/3c flour
1T snipped parsley
1t baking powder
1/8t dillweed
1/4c soy milk
2T oil


Combine vegetables and broth and bring to a boil. Continue boiling until vegetables are soft.

Prepare dumplings.

Combine remaining ingredients and drop mixture by tablespoons atop bubbling stew. Cover. Simmer for 10-12 minutes or until a toothpick comes out clean.
