onion, chopped
carrots, chopped
broccoli, chopped
cauliflower, chopped (optional)
1c rice
broth (gluten free, if requred)
Poultry seasoning (optional)
Place vegetables in a big pot. Add broth to cover and bring to a boil.
Reduce heat and let simmer until vegetables are tender and rice is cooked.
Add a little poultry seasoning if soup needs a more “chicken-y” flavor (this will depend on the type of broth used).
