Corn Avocado and Tomato Salad

2c cooked corn
1 avocado, chopped
1 ripe tomato, chopped
2T red onion, diced
mixed greens


Dressing:

1/2t lime zest
1T lime juice
2T olive oil
1/4c chopped cilantro
1/4t salt
1/8t pepper


Combine the first four ingredients in a bowl and set aside.

Combine the dressing ingredients in a separate bowl, mix thoroughly, and add to reserved vegetables.

Stir gently to coat.

Serve over mixed greens.
