This is my vegetarian adaptation of my Grandma Hamstreet's recipe. She used it to stuff peppers, and Dan liked it better than my stuffed pepper recipe.
Cook 1c rice.
Heat 1T vegetable oil, 1t soy sauce or tamari, and 1/4t liquid smoke in a frying pan.
Add 1 medium onion (chopped) and 1 green pepper (finely chopped) and fry until browned.
Add 1c chopped tomatoes.
Season with salt, paprika, and/or chili powder to taste.
Mix in cooked rice.
