Fajitas

1lb firm tofu
1 pkg fajita seasoning, or
1/2c orange juice
1T olive oil
2T vinegar
3 cloves garlic
1t cumin
1t ground coriander
1t oregano
onion
zucchini
red, yellow, or green pepper, or combination
portabello mushrooms
avocado
flour tortillas
dairy-free sour cream
salsa


Drain tofu and cut into strips.

Marinate tofu in fajita seasoning or according to package directions.

Stir-fry vegetables and seasoned tofu.

Mash avocado. Set aside.

Steam flour tortillas just to soften.

Serve tortillas with filling, mashed avocado, sour cream, and salsa.

Gluten Free Adaptation

  • Do not use packaked fajita mix, make your own marinade instead
  • Serve on corn tortillas
  • Omit dairy free sour cream
